TODAY’S POINT OF BALANCE: In my effort to live a healthy, balanced life, I had Hans hide my scale last night. All I know of its location is that it is no longer in our master bathroom. We’ve made an agreement to bring it out once a month to keep some consistency. I’m trying to remember that it doesn’t matter what that number is. What matters is how I feel in my body, which means listening to it instead of reading a number from an electronic device.
Also last night, I had some of that Edy’s fro-yo on an ice cream cone during Housewives. My stomach started to grumble again right before bed, so I took a piece of turkey, filled it with spinach and made a turkey/spinach roll up. I had two and they were yummy with a bit of mango pineapple salsa!
This morning, I was horribly indecisive, but decided on the egg mcmuffin standby that I love:
I drank about 3/4 of that mug of coffee, then another 3/4 of a mug once at work.
Lunch was inspired by last night’s leftovers: a general tso ground turkey wrap with spinach & the usual side veggie:
As though the first day back at work after vacation wasn’t hard enough, I felt incredibly dizzy STILL from the cruise ship. I was completely exhausted by the end of the day and figured that an hour long kickboxing class would be too much for my off-balance body. I ate this snack to hold me over for the rest of the afternoon instead of my planned pre-workout banana:
Hans found out last minute that a friend had an extra ticket to tonight’s Browns/Ravens game, so I found myself on my own for dinner. This made me secretly giddy because I knew I could use the rest of the ground turkey I had left over from yesterday!
I should have just done what I really wanted: browned the meat, drain it, add it to some marinara sauce and serve it over some noodles. But no, I had to be “creative”. I used my mandolin slicer on some eggplant, mushrooms, carrots and tomatoes, and diced some scallions. I sautéed that all up with some salt, pepper and italian seasoning. Meanwhile, I browned the meat with salt, pepper, italian seasoning and garlic powder. I drained the meat really well, added it to the veggies to get this bowl of meat/veggie goodness:
At this point, I wanted some carbs with this, but was too impatent to make pasta. Flatout wrap number two for the day, here I come!
I used about half of the mix in the wrap and topped it with some grated parm cheese. It was definitely tasty, but not exactly what I wanted. However, it was filling, so overall, the wrap did its job.
To prep for Hans’ birthday tomorrow, I spent the evening cleaning the main level and basement of our house – aren’t I the best wife?! Once done, dizzy and exhausted, I knew exactly how to treat myself:
I’m so happy that I was so productive this evening. I really do hate to skip a kickboxing class, but I think I made the right decision to stay home, listen to my body and get some work done. I’m excited for Hans’ friends to come over to watch the Cavs game tomorrow night – all the hard work is done! To bed early so I can get to the gym in the AM!
