Last night, I enjoyed this ice cream combo of vanilla & chocolate with some crushed up pretzels:
On to Friday! This AM went A LOT better than yesterday – considering I had BOTH contacts in my eyes!
(As an update, I found my left contact… on my bathroom floor. Awesome.)
I had my usual banana as pre-workout fuel. Since I was not in the mood to think of a creative workout, I stuck with a variation on yesterday’s:
I’ve noticed since taking my workout hiatus, my arm strength has declined noticeably. Looks like I’ll be breaking out a Michelle Obama inspired workout routine soon!
Breakfast was thrown together as I was hurrying to get something in my stomach and get ready for work. I can’t believe how incredibly hungry I have been the past two mornings. I might have to step up my usual banana to something more substantial. Using my handy-dandy egg rings I made this open face egg sammies:
Lunch was eaten at my desk as my to-do list is a MILE long today! The ham sandwich was ridiculously large because of the layering of the feta cheese and tomatoes. The sprouts didn’t help the height issue either. Eaten with the last of our pears:
In order to push thru the remaining tasks, I enjoyed my afternoon snack in liquid form:
Since I was silly and had a coffee as my afternoon snack instead of real food, I was famished by dinner time. Since our fridge is barren, Hans was seriously hinting at eating out at one of his favorite local establishments: Stancato’s in Parma. I was game since they have a rockin’ salad bar:
I am going to be completely honest in the next two statements:
- 1) that picture makes all of those portions look GINORMOUS.
- 2) I went back for seconds on the salad, soup AND bread!!!
Here’s the dissection of my meal:
THE SALAD: I stuck with uber healthy options for my salad: romaine lettuce, black olives (only on the first round), cucumbers, red onion and banana peppers. No creamy pasta or potato salads for me tonight! I put two ladles of their fantastic house dressing in a soup cup – and even between the two “salad plate” serving sizes, I didn’t use all the dressing (maybe the equivalent of a ladle and a half).
THE SOUP: I saw “Meatball Marinara” and I knew exactly what I was going to do. The meatballs in the soup were barely 1/2 an inch in diameter in size. I did my best to get as many meatballs as possible, but my first round cup was from the end of a pot. I hardly ate 1/3 of the first cup. The second cup was more successful in the amount of meatballs obtained since it was their was a new pot on the salad bar. Even with just eating the meatballs, I ate about 1/2 of the cup’s contents.
THE BREAD ROLL: Those suckers were pretty big, but I had a plan and it involved the meatballs from the soup. I hollowed out the roll both times and just left the crust on each so that I could create mini sub sandwiches with my meatballs from the soup! It was fantastic! Even with that plan in place, I didn’t eat the entire crust of each roll.
So in total, my dinner probably added up to:
- One RIDICULOUSLY large salad with a normal portion of dressing
- One cup of meatball soup
- One bread roll
However, I was SO hungry that I ate everything way too quickly and had to be rolled out of the restaurant. That’s what I get for eating too quickly! BIG mistake! At least I feel good about filling up on all those veggies! A healthy splurge indeed!
