Last night I gave into my craving for ice cream before bedtime: the picture is on my cell phone, but my laziness is getting the best of me.
This morning, I tried out another internet blog sensation: Eggs in a Hole! These were made with:
- two pieces of rye bread
- two jumbo eggs
- 1/8 cup of shredded cheese
I thought I was going to have to fight off Hans for this one! This is definitely going to be added to the breakfast rotation. I drank about half of that cup of coffee, and then half of my usual to-go cup on the way into work. Both had some sweetener and 1% milk.
Lunch was a bowl of TJ’s butternut squash soup and a ham wrap with low fat cheddar, spinach, sprouts and spicy mustard. It is National Sandwich Day!
After a long day of too much thinking (!!!), 4:30PM rolled around and my stomach said “snack time!”:
I was really hoping to motivate myself to the gym post work, but I’m not very successful with evening workouts unless kickboxing class is involved. I need to either commit to more regularly scheduled early morning workouts or find that afternoon energy boost.
When it came to dinner, I knew I had some left over skinless boneless chicken breast to make – but how? We needed a lazy Tuesday night dinner. I looked to my old standby – help me Trader Joe!
I had purchased a bottle of their General Tso’s sauce awhile ago. When Hans said he was considering calling the local chinese joint and picking up a to-go order, I knew exactly what to make. I cooked the chicken in the sauce. I nuked some frozen broccoli to get it defrosted, then thru that in with the saucy chicken. While I made rice for Hans, I cut up 1/2 an eggplant and 1/2 a white onion, which was then sauted in a pan sprayed with some Pam:
I normally would have made this with some WW noodles, but I have to admit, I didn’t miss them. I’m saving my carbs for a post-Biggest Loser treat! I’m REALLY tempted to go hit up Starbucks as GINGERBREAD LATTES ARE BACK! I love that red holiday cup!
