Last night, I did give in for that late night snack of cherry vanilla ice cream. I have to also admit, I ate it straight out of the carton. And didn’t take a picture. I’ve done you very wrong, my faithful readers. The good news is that there is still some ice cream left in that carton for later this week 🙂
Moving on to Monday: I started the day with a home made “egg mcmuffin” sandwich:
I started by julienning some spinach leaves. I sprayed a small pan and egg ring, then cooked down the spinach until it wilted. I then cracked one jumbo egg into the egg ring with the spinach, sprinkled some red pepper flakes and salt, then “scrambled” the egg as it cooked in the egg ring. Meanwhile, I toasted a whole wheat english muffin. I removed the cooking egg from the egg ring and flipped it to finish cooking the other side of the egg. Once done, I removed the egg from the pan. I put one piece of ham in the pan to get it hot. I flipped the piece of ham over, then added one piece of low-fat cheddar on top of it to melt the cheese. Once the cheese was good and gooey, I removed the ham/cheese combo & placed it on the bottom half of the english muffin. I then placed the egg on the ham, then placed the top half of the muffin on the egg.
After all that process, you have one tasty breakfast:
I then enjoyed my usual cup of coffee on the half an hour drive into work:
I could have probably snacked around 11AM, but decided to enjoy a large mug of Lipton Blackberry tea. It worked until 12:45PM, so I went and made a familiar combo:
The veggie wrap contained hummus, one low-fat cheese wheel, spinach, sprouts, mushrooms and green pepper. The soup was the second half of the Trader Joe’s soup I enjoyed last week.
Knowing I needed something to fuel my evening workout, I decided to mix it up from the regular banana eaten on the way to the gym with this power bar:
On Mondays, Thursdays and Saturdays, I hit up an awesome cardio kickboxing class that I’ve been going to regularly for the past three years. Rush hour traffic wasn’t too bad for a Monday night, so I had plenty of time to warm up my legs:
- 25 minutes on the elliptical (just under 4900 strides)
- 50 minutes of kickboxing
- 5 minutes of walking around the track to cool down
The one thing I hate about Monday nights at my Bally Total Fitness: it’s so busy, there’s no room anywhere in the club to stretch afterwards! I went home and decided I earned some cheese tortellini with a bunch of veggies and marinara sauce:
In true PASTA TOSS fashion, I sauted broccoli, carrots, mushrooms, tomatoes and spinach – then threw in 1 1/3 cup of tortellini. Topped it off with some sauce and a sprinkle of parmesan cheese. SO TASTY – one of my favorite dinners after a great kickboxing workout.
Tonight, I’m chillaxin’ on my parents couch watching DWTS while enjoying a cup of tea. I’m hoping dinner keeps me full through the night – I’m hoping to not have another encounter with that ice cream carton this evening!
