Let’s start with my POINT OF BALANCE for today: I’m loving this glamour.com blog post about 7 Healthy Things to Do for Yourself This Weekend. I’m going to go buy a pumpkin just to roast some pumpkin seeds!
On to the food: remember that carton of ice cream from yesterday’s post? I definitely enjoyed some of its contents last night before bed:
So Happy Friday! I’m enjoying so well earned comp time today, so I enjoyed breakfast While watching The Today Show:
- a bowl of the Whole Foods 365 Organic version of Honey Bunches of Oats with a few raspberries, a banana and some 1% milk.
- the usual AM cup of coffee
After getting some laundry started, I went to Bally to make up for skipping kickboxing last night:
- 35 minutes on the elliptical
- 45 minute flow yoga class
- another 30 minutes on the elliptical
- stretching to cool down
On the way home, I ran to our favorite local bakery: Michaelangelo’s in Broadview Heights. There was a HUGE line when I walked in. A pepperoni roll caught my eye, but the two ladies in front of me bought all of them!! Alas, I left with a pound of our favorite pumpkin flavored coffee and a special treat for Hans to welcome him home from his big test.
I was STARVING when I made it home, so I made a post-workout favorite: PASTA TOSS! I start by cooking the following three things in their own pans/pots:
- One de-cased chicken sausage – this one was spinach & feta from Whole Foods
- One cup of whole wheat egg noodles
- A ton of veggies: white onion, mushrooms, green pepper, plum tomato and spinach: all sauted in a bit of italian dressing
I drain the extra oil/juice from the sausage, then throw the cooked sausage and pasta in the pan with the veggies. I add the spinach at the end since it will wilt so quickly.
So filling and satisfying! After some more laundry and dishes, I grabbed some Starbucks with a friend – a grande Pike Place with a shot of the sugar free Hazelnut syrup and a splash of half & half.
Afterwards, since I was out on the East side, I decided to hit up Trader Joe’s. I wanted to stock up on their low-sodium boxed soups, veggie burgers, chicken sausage and gnocchi for Hans. On the way home, I snacked on about 3/4 of this bag of red grapes to hold me over for dinner:
I came home to find my mentally exhausted husband. Normally we’d sneak out for a bite to eat, but since we went out last night, and I was feeling domestic, I decided to make some homemade pizza with salad:
To make the pizza, I sauteed the chicken in some Romano Vinaigrette dressing. I then took a Trader Joe’s whole wheat pizza dough, topped it with a bit of marinara, the cooked chicken, green peppers and tomatoes. My part of the pizza had some low-fat mozzarella – Hans’ had a four cheese shredded cheese blend:
We then ran over to my Grandpa’s for the usual Friday night hanging out around the kitchen table. I think we’ll spend the rest of the evening watching Suze Orman deny people of their financial dreams! Enjoy your Friday night!
